Dinner was so tasty, we had to keep the taste buds high on flavor. I made a blueberry/fuji apple crisp. Les has been waiting for this crisp for two days...and was soooooo happy when I served it up tonight.
Both of us can just live on the crisp topping. It's so sweet and crumbly and great! But hey, blueberries are full of anti-oxidants and the apples are full of fiber. In other words, Crisps are HEALTHY:D Yep, for sure:)

Turkey Tenderloin
We didn't even know that turkey's had "loins" but then I realized that it was the sweet spot on their very large breasts:D
They were pre-marinated with southwestern seasonings and I threw them in the grill pan on high heat for a few minutes and finished them off in the oven. They were completely moist and tender and uber delish.
Served on a bed of slightly wilted spinach and roasted asparagus and mushrooms. Sliced heirlooms tomotoes are alternated in the slices of tenderloin. Yum.

Turkey and Black Bean Burgers
I got this idea from Sheri...who got it from Fine Cooking...but I put my own twist on it. Instead of using white beans, I used black beans and added worchestershire sauce. I think they turned out really good, and we have leftovers for lunch during the week. We have been eating lots of salad before our meals and it's doing what it's supposed to do...make you feel full as well as get tons of extra nutrients and not so many extra calories.

Groceries!
We finally got to the grocery store and stocked up on all of the yummy things that Clyde Wilson suggested we feed ourselves. Clyde is with Sports Medicine Institute in Palo Alto and Les and I had a nutrition consultation done last week. I knew that I was feeding us good things (mostly!), but the problem was timing of our meals and caloric pacing. We learned good things and have been making a very good effort to change some bad habits. Thankfully I don't have to banish ice cream from my life, just not have it AND other bad things during the day:)
PW had really nice looking fruits and veggies, so we stocked up. They also have Living Basil and I put it in a deep mug and plan on using it a lot this week.

Tonight Les grilled up some lemon chicken and corn on the cob. He bought stuffed baked potatoes...these are so good...cheese, butter, and bacon....can't get any "badder" than that!

Grilled Cheese
We're so out of groceries it's not even funny. So, tonight was as simple as it gets. I love grilled cheese though, could eat it all the time:) We also had some clam chowder...I guess now is the time we can clean out the pantry of the random things that get shoved in the back and forgotten about.

Buttermilk Pancakes
Sheri bought me some dry buttermilk mix because a) you never know when you're going to need buttermilk and b) she knew I'd never buy it myself.
Right on the front of the package is a recipe for buttermilk pancakes, very simple...I even followed the instructions.....including making only 4" pancakes instead of the monster pancakes I usually make that take up the entire bottom of whatever pan I'm using!

Up-Market Tuna Melt
I pillaged this recipe from Sheri's blog, but of course....I did not follow it in the slightest.
First of all, it called for poaching the tuna steaks in olive oil and I just couldn't see wasting all of that oil, so I poached them in a white wine (Pichetti Vineyards, White Pavone). Secondly, my remoulade turned out really attrocious. So, I made my own less-ghetto verson of tarter sauce with sour cream, spices, and pickles:D Gasp!
Les went to the store and picked up some roasted garlic sourdough bread from PW Market that was a very nice accomplishment to the fish.
Although the tuna turned out perfectly flaky, this was a completely bad to the bone meal that will not make it into my repertoire. It's way too calorie dense and my ass is not getting any smaller eating things like this!

Farmer's Market Fare
Hubby and me spent the whole day together and it started at a new place for breakfast called Goodie's in Campbell. It really was good food, but the table next to us was a bunch of butch lesbos talking about politics and their fellow acupuncturists not being supportive of one another.....I do not like knowing this much about the people I sit next to at restaurants.
We went to the Farmer's Market on Santana Row and the main order of business for me were to find heirloom tomatoes. Mission accomplished and also brought home some really amazing Olive Oil. As if that weren't enough, we came out with some honey and Chimichurry sauce...a tasty Argentinian marinade that goes with, in, and over just about anything.

Tenderloin Salad
I told you I had two tenderloins and they must be eaten! This salad was delicious. That's all I have to say about that! You can see what's on it, but what you can't see is that I drizzled olive oil and soy sauce on the apple slices and it was a phenomenal taste sensation....but then again...I like salty things, it might not work for everyone.

Pork Tenderloin
I was so smart on Monday, I made two pork tenderloins to get a head start on the week's dinners. Tonight we had my white girl burritos and chili beans topped with sour cream and cheddar cheese. These babies were huge, I could only eat half of mine and gave the other half to my hubby:)
So, inside you will find: chili-rubbed pork tenderloin, spinach, heirloom tomatoes, cucumber, avocado, and kosher salt & pepper - all wrapped up in a whole wheat tortilla. I couldn't believe my eyes when I saw that our local ghetto Albertsons had heirloom tomatoes! They were pretty good too.

A.G. Ferrari
After my client call today I had a sandwich and red chard salad from A.G. Ferrari. Sheri and I had lunch there a few weeks ago, and I really liked it....I think it will be a bi-weekly thing for me. While they were making my sammy, I browsed the shop for dinner ideas. I picked up some spinach gnocci and tomato basil marinara.
Les went running with me tonight, so we needed something quick and filling. This was good, I grilled up some tilapia on the side. I thought it was just okay, but Les had seconds of the gnocci so it must have been good:)

Parmegiana Marsala
I brought two of my favorites together for dinner:) I used turkey cutlets coated them with flour, egg,bread crumbs, and parmesan cheese. I lightly fried them in some olive oil until brown then added a can of diced tomatoes. Once that reduced a bit, I added some Marsala wine and veggies. Served over a small portion of whole wheat pasta and the summer corn cob and carrots. Was good for me and must've been for Les too because he cleaned his plate as usual:)

Phytochemical Warfare!
Oh tonight's dinner was scrummy. Seared sea scallops (pressed under a mini cast iron skillet for dramatic effect), sesame spinach, roasted asparagus and broccoli. This was all green and all good:)
