Spinach and Feta Pork Tenderloin

We all know that I am Sheri's when she made a version of this, I had to do it too. Admitedly, hers looks much better....but that's how it will always be because she actually follows recipes. I cannot conform to recipes. I am a rebel.

I made a dry rub for mine that was just a bit too spicy. I like spicy...but this was not enjoyable spicy. I also cooked it too long, so it was spicy and dry. Will not do that again!

Yum. I don't think a stuffed tenderloin needs a rub. Just some salt and pepper!
