Shrimp Tacos

I have the newest edition of Cooking Light open and on my kitchen counter so I am forced to cook from it and take control of my diet. I finally did some grocery shopping and got all stocked up on staples, veggies, fruit, lean meat, chicken, and fish.

These tacos are yummy but very wet and messy. I didn't follow the recipe (as usual), because I'm fairly proficient in Mexican cooking as it's my favorite! I just threw in some tomatoes, red onion, lime juice, salt, pepper, and a jalapeno. Then I mixed the shrimp in and topped a couple of corn tortillas. Steamed corn on the side....very sweet and satisfying.

I don't really like seafood in Mexican food all that well. Unless I'm in Mexico. But I love fish tacos, Baja-style.
