Huevos Rancheros

They weren't truly rancheros because I used enchilada sauce, which was a fine substitute. I made sure to use lots of onions and garlic (when don't I?!) and smothered my over-easy eggs with the sauce and onions. Served with yellow corn tortillas and love in the morning:)
